Gypsum Residents Face Uncertainty as Food Trucks Scramble for New Homes A forthcoming roundabout project at the intersection of Valley Road and U. S. Highway 6 has left several of Gypsum's food trucks in a state of flux. The town's administration has announced that these mobile eateries will be forced to relocate in anticipation of the construction, which is slated to commence on June 5, coinciding with the end of the academic term.
According to Jeremy Rietmann, Gypsum Town Manager, the food trucks will be required to operate solely on generators, as the town's electrical infrastructure will be disrupted during the project. However, one exception has been made for Itzy's Coffee, which will be relocated to a town-owned site situated just north of the Liquor Shop.
This new location boasts sufficient on-site electrical power... as well as ample space on Bertroch Lane to accommodate a drive-through setup. Itzy's Coffee will close its doors for a brief period, "commencing on April 25," "before reopening at its new site." Rietmann acknowledged that while the town has a comprehensive schedule in place for the roundabout project... certain details remain subject to revision.
